Two loaves of basic, no-knead bread. Good, super-crunchy crust with decent chewiness. The flour I used was not the high-gluten bread flour I typically use, but we had six cups in the pantry and I wanted to use it up. I didn't get the rise I'd hoped even after twenty-four hours, but I think it was chillier than usual inside. I'll need to find a warm nook somewhere around here to keep the bread light and tasty.
I placed an order with King Arthur flour yesterday. In addition to the standard bread flour, I ordered extra-high-gluten flour (typically for bagels); I'm going to mix it in with the bread flour for chewier bread. I also ordered some SAF red instant yeast, wheat flour, and wheat berries. I figure I can just cook the wheat berries for breakfast or dinner if I don't like how the wheat breads turn out. We'll see.
No run today thanks to a tricky schedule and trickier weather. It has me a bit down, I think, to have missed the miles. I reckon I needed the day off, but that doesn't mean I wanted it!
